Vegan Tomato Soup


1 large onion, diced

5 large cloves of garlic, minced

5 cups low sodium vegetable broth

3 cups pureed tomatoes

2 Tbsp Italian seasoning

1 Tbsp Chili powder

3 carrots, shopped

Salt and pepper to taste

1/4 tsp cayenne pepper (optional)


Saute onions and garlic in a little bot of the broth until translucent.  Add in remaining ingredients.  Bring to a boil, then reduce to a simmer and cook for about 2 hours.  To make this soup smooth and creamy, run in through a blender, or leave it chunky!
